1 In 2009, the total income from licensed school canteens was $4.287 million* at the 339 schools that chose to license their canteens. *Reported in Annual Financial Statements compiled by government schools The decision about the method of operation of the school canteen is made by determining which type of operation provides the best advantage for the school and its community. Consultation between the Principal and parent organisation, the nature of the school community, the population of the school and the cost of the operation all contribute to the school s decision. A standard licence agreement provides a set fee over a committed time period, so that school income can be confidently budgeted. While the licensee administers the canteen, the Principal maintains control over the agreement, including the nature of the food sold. Other sources of commercial income include the hire of facilities by schools, which provided schools with $14 million last year.
